Kocaeli ilinin balık tüketimi ve tüketici kararlarını etkileyen faktörlerin araştırılması

Özet
Bu çalışmada, Kocaeli ili merkez ilçelerinde yaşayan bireylerin su ürünleri tüketim davranışlarının değerlendirilmesi amaçlanmıştır. Çalışma, Ağustos – Eylül 2017 tarihleri arasında, 626'sı kadın, 174'ü erkek olmak üzere 800 birey ile yüz yüze görüşme tekniği kullanılarak 32 soru içeren anket uygulaması yapılmıştır. Çalışmada elde edilen bulgular incelendiğinde, bireylerin %46.62'sının kırmızı eti, %34.78'inin beyaz eti ve %18.60'ının ise balıketini tercih ettikleri belirlenmiştir. Ankete katılan bireylerin %65.24'ü kışın, %28.15'i ise sonbaharda ağırlıklı olarak balık tükettiklerini belirtmişlerdir. Su ürünleri tüketimine cinsiyet, yaş, meslek grubu, gelir seviyesi ve öğrenim durumu gibi kriterlerin etki ettiği gözlemlenmiştir. Katılımcıların balık satın alırken %40.41'i tazelik, %37.66'sı hijyen, %19.43'ü ekonomik olmasına dikkat etmektedirler. En çok tüketilen balık türünün hamsi (%71.55), en çok tercih edilen pişirme yönteminin yağda kızartma (%46.74) olduğu belirlenmiştir. Bireylerin çoğunlukla (%27.59) aylık gelirinin 1500-2000 TL olduğu, genel olarak (%85.75) avcılık ile elde edilen ürünlerin tüketimini tercih ettikleri, piyasada balığı kolaylıkla temin edebildikleri (%89.24) ve balık çeşitlerini yeterli buldukları (%77.42) belirlenmiştir. Katılımcıların (%94.27) balıketini doyurucu buldukları, balık satın alırken su ürünleri av yasakları hakkında bilgi sahibi oldukları (%70.25) tespit edilmiştir. Araştırmada balığın taze olarak tüketildiği ve işlenmiş balık ürünleri tüketiminin az (%6.18) olduğu belirlenmiştir.
In this study, seafood comsuption habits of individuals living in the central districts of the province of Kocaeli. The study was conducted with 800 individuals with 626 women and 174 men in August and September 2017 using face to face interviews and survey that includes 32 questions were administrated. Considering the finding obtained from the study it has been determined that 46.62% redmeat, 34.78% chickenand 18.60% of the participants like eating. The majority of the respondents(65.24%) stated that mainly consumed fish during winter, there maining (28.15%) during the fall. It was determined that seafood consumption was associated with age, occupations, income levels and state of education. Participants buying fish are factors taken into account are that freshness to 40.41%, 37.66% hygiene, 19.43% economical, in this research conducted. The most consumption fish species is anchovy (71.55%), frying(46.74%) is the most preffered consuming type for the results. It was determined hatmost of the individuals (27.59%) income was 1500-200 TL, in generally preferred to consume the products obtained by hunting (85.75%), could be easily ensured the fish on the market (89.24%), participants were found to be satisfied with fish (77.42%) It was determined that participants (94.27%) were found to be satisfied with fish, and they were (70.25%) informed about fishing prohibitions when purchasing fish.
