    2012-2013 Yılı Arasında Sinop İli’nde Satışa Sunulan Kültür Balıklarının Aylık Fiyat Değişimlerinin İzlenmesi

    Bu çalışmada Sinop ilinde perakende balık satış yerlerinde satışa sunulan akuakültür ürünlerinin aylık fiyat değişimlerinin belirlenmesi amaçlanmıştır. İşletmeler tabakalı amaçlı örnekleme yöntemi ile belirlenmiştir. İşletmeler aylık satış cirolarına göre I (en çok), II (orta) ve III (en az) olarak gruplandırılmıştır. Her grubu iki farklı iş yeri temsil etmektedir. Araştırma süresince ayda iki kez günün aynı saatinde türlere ait fiyatlar elde edilmiş, veriler aylık ortalamasd olarak hesaplanmıştır. İşletme grupları arasındaki fark tek yönlü varyans analizi (ANOVA) ile türler arasındaki fiyat ilişki düzeyleri korrelasyon analizi ile IBM SPSS 21 programında değerlendirilmiştir. İşletmelerde kültür balıkları ürünlerinden çipura (Sparus aurata), levrek (Dicentrarhus labrax), gökkuşağı alabalığı (Oncorhyncus mykiss) (porsiyonluk ve kiloluk) ve somon balığı (Salmo salar) (ithal) türlerinin satışının yapıldığı belirlenmiştir. Av yasaklarının olduğu dönemde (NisanAğustos) satışa sunulduğu, yasağın kalktığı Eylül ayından itibaren çoğunlukla avcılık ürünlerinin en az olduğu günlerde satışa sunulduğu tespit edilmiştir. Tüm türlerde örnekleme istasyonları arasındaki fiyat farkının önemli olmadığı, ortalama fiyatların 2008-2013 yılı ortalama fiyatlarına göre yüksek olduğu tespit edilmiştir. Çalışmada, alabalık ile somon arasında negatif-kuvvetli bir ilişki tespit edilmiştir.

    A Comparative Approach to Sustainable Fish Meal: Prussian Carp Meal (Carassius gibelio Bloch, 1782)

    In the present study, the usability of Prussian carp (Carassius gibelio) meal (PCM) as an alternative animal protein source in fish feeds was investigated by comparing it with anchovy (Engraulis encrasicholus) and sprat (Sprattus sprattus) meals in terms of their biochemical, fatty acid, amino acid and element compositions. Prussian carp were obtained by fishing and made into a meal (PCM). Anchovy (AM), and sprat (SM) meals were purchased from a commercial company. The amino acid analysis results show that PCM's total, essential, and non-essential amino acid values were lower than that of AM and SM (P < 0.05). The polyunsaturated fatty acids (PUFA) and Omega-6 values of PCM were higher than AM and SM; and lower than saturated fatty acids (SFA), Omega-3, eicosapentaenoic acid (EPA), docosahexaenoic acid (DHA), atherogenicity index (AI) values (P < 0.05). According to the element analysis, the P and Ca values of the PCM were higher than the AM and SM (P < 0.05), and the Na, K, Fe, Cu, Zn and Se values were lower. According to the results of the present study, PCM can be utilized in the feed industry to boost the sustainability of fish meals used in feed production, which in turn will reduce the foreign dependency on vegetable and fish meals, and lower feed costs.

    Akçakoca (Düzce, Türkiye)’da 2015-2019 Yillari Arasinda Avcilik Sezonunda Satisa Sunulan Deniz Baliklarinin Fiyat Yönünden Incelenmesi

    Arastirma, 2020 yili Haziran-Temmuz aylarinda Düzce ili Akçakoca ilçesinde balikçi barinagi ve Akçakoca Su Ürünleri Kooperatifinde gerçeklestirilmis olup, deniz baliklarinin aylik fiyat degisimleri tespit edilerek, türler ve yillar arasindaki fiyat iliskilerinin belirlenmesi amaçlanmistir. Akçakoca’da en çok satisi yapilan hamsi (Engraulis encrasicolus ponticus), istavrit (Trachurus trachurus), mezgit (Merlangus merlangus), barbunya (Mullus barbatus), kalkan (Psetta maxima), iskorpit (Scorpaena porcus), kefal (Mugil cephalus), kirlangiç (Chelidonichthys lucerna) ve tirsi (Alosa fallax nilotica) baliklarinin kooperatif araciligi ile satis fiyatlari ve son bes yilin fiyat degerlendirilmesi ayrintili olarak yapilmistir. Akçakoca ilçesinde satisa sunulan baliklarin ortalama fiyatlari ile Türkiye’deki yillik ortalama balik fiyatlari ile karsilastirildiginda; barbunya ve kalkan baligi fiyatlari Akçakoca’da Türkiye ortalamasinin altinda diger baliklarin yillik ortalama fiyatlarinin göreceli olarak Türkiye ortalamasi üzerinde oldugu tespit edilmistir.

    Bafra Balık Gölleri'nden Ulugöl'de Tatlısu Istakozu ( Astacus leptodactylus Eschscholtz, 1823)'nun Yumurta Verimliliği

    Çalışmada, Bafra (Samsun) Balık Gölleri'nden Ulugöl'de bulunan ve içsularımız için önemli ekonomik türlerinden olan Astacus leptodactylus (Eschscholtz, 1823)'un yumurtalı bireylerinin vücut ağırlığı, yumurta özellikleri ve aralarındaki ilişkiler incelenmiştir . Ortalama canlı ağırlığı 40.89±1.63 g olan dişi bireyler üzerinde yapılan araştırmada toplam yumurta ağırlığı ortalama 3.16±0.27 g ve birim yumurta ağırlığı ortalama 0.018±0.001 g olarak belirlenmiştir . Ayrıca ortalama yumurta sayısı 178.07±13.69 adet, birim canlı ağırlığa düşen ortalama yumurta sayısı 4.36±0.30 adet/g, ortalama yumurta çapı 2.1 1±0.05 mm olarak tespit edilmiştir . Çalışmada toplam ağırlık ile toplam yumurta ağırlığı arasında (r=0.74), toplam ağırlık ile yumurta sayısı arasında (r=0.52), toplam yumurta ağırlığı ile yumurta sayısı arasında (r=0.72), yumurta sayısı ile birim canlı ağırlığa düşen yumurta sayısı arasında (r=0.84) önemli ilişkiler belirlenmiştir .

    Balik Tüketim Egilimleri, Malatya Ili Örnegi

    Arastirmada, Malatya il merkezinde yasayan hane halkinin balik tüketim egilimleri incelenmistir. Arastirmanin birincil verilerini basit rasgele örnekleme yöntemi ile seçilen 240 kisiden anket yoluyla elde edilen veriler olusturmustur. Verilerin istatistiksel analizinde; Binary Lojistik Regresyon analizi, Khi-kare uyum testi analizi ve betimletici istatistiklerden yararlanilmistir.Ankete katilanlardan balik tüketenlerin %89’u taze tüketimi tercih ederken, %78’i çesit olarak deniz baliklarini tercih ettiklerini belirtmistir. Çalismada baliketi tercihinde yas ve egitim durumunun önemli düzeyde etken oldugu anlasilmistir. Balik tüketim sikligi incelendiginde; ilkögretim mezunlarinin %79’u, ortaögretim mezunlarinin yaklasik %37’si on bes günde bir, yüksekögretim lisans ve lisansüstü egitim mezunlarinin haftada bir olarak sirasiyla %69 ve %65 oraninda oldugu tespit edilmistir.Balik tüketim sikligi dikkate aldiginda Malatya ilinde tüketimin Türkiye ortalamasinin altinda oldugu tahmin edilmektedir. Sosyo-ekonomik nedenlerin yaninda, cografik sartlar ve taze ürüne ulasma zorlugu, tüketici egilimini etkiledigi düsünülmektedir.

    Balık Tüketim Eğilimleri, Sinop İli Örneği

    Çalışmada Türkiye ve Karadeniz Bölgesinin önemli balıkçılık yerlerinden olan Sinop il merkezindebalık tüketim tercihlerinin belirlenmesi amaçlanmıştır. Araştırmanın özelliği gereği iadesiz seçimgerçekleştirilmiştir. Araştırmanın birincil verilerini, anket yoluyla elde edilen veriler oluşturmuştur.Verilerin analizinde; betimletici istatistikler, ki-kare uyum testi ve regrasyon analizindenyararlanılmıştır. Araştırmada denek sayısını belirlemek için; n=Npqta2/[(N-1)d2+ pqta2] formülündenyararlanılmıştır Katılımcılardan %58’i balıketinin sağlıklı olduğunu belirtmiştir. En çok tükettiklerietin balıketi olduğunu belirtenlerin oranı sadece %21’dir. Deneklerin tamamına yakını (%94) balığıtaze olarak tüketmeyi tercih etmektedir. Haftada en az bir kez balık tüketenlerin oranı sadece %2iken, en yüksek oran (%48) on beş günde bir tüketimdedir. Deneklerin yarısına yakını (%45)balıketini ızgarada pişirerek tüketmeyi tercih etmektedir. Balıketi tüketenlerin %90’ı deniz balığınıtercih ederken, %71’i balık satış yerlerinin bir arada olmasını istemektedirler. Ayrıca deneklerin%49’u balık sakladıklarını belirtmiş ve balık saklayanların %82’isi soğuk muhafaza, %16’sı tuzlamaile balık saklamayı tercih ettiklerini belirtmişlerdir. Soğuk muhafaza yoluyla balık saklayanların%74’ünün geliri 3000 TL ve üzeri gelir seviyesine sahiptir. Tuzlama yoluyla balık saklayanların hergelir grubuna dağılmış olması, yöredeki kadim kültürden kaynaklandığını söyleyebiliriz.

    Comaprative fatty acid composition of European seabass Dicentrarchus labrax (Linnaeus, 1758) farmed in cages in the Aegean Sea and the Black Sea coasts of Turkey

    The aim of this study was to analyse the fatty acid composition of European seabass Dicentrarchus labrax (Linnaeus, 1758), fanned in marine cages in the Aegean Sea and in the Black Sea coasts of Turkey. The study was conducted between June 2014 and September 2015 using the same feed in all the cage farms. Fish samples representing the stock were collected at regular intervals and morphometric measurements were taken in the laboratory. Fatty acid analyses were carried out by gas chromatography. Biochemical composition of harvested European seabass indicated high dry matter and crude fat values in the Black Sea region and high crude protein and crude ash values in the Aegean region. Significant regional differences between fatty acid composition (p<0.05) was observed, despite being fed with the same diets.

    Comparative Analysis of Egg Biochemical Composition and Egg Productivity Rainbow Trout (Oncorhynchus mykiss Walbaum, 1792) in Different Stations in Turkey

    In the study, two objectives were selected in determining the quality and efficiency of Oncorhynchus mykiss eggs obtained from different stations: (1) to determine the biochemical, amino and fatty acid composition and egg quality, (2) to study the effect of egg productivity on egg quality. The study was conducted in 5 different production areas which is produces the most rainbow trout eggs in Turkey. Broodstocks over 3 years old were randomly selected from the company. After the egg productivity analysis, biochemical analysis were conducted. The most abundant amino acid in all stations was glutamic acid, followed by leucine, lysine, in that order. Total amino acid and essential amino acid (EAA) values were between 30.40±0.93-44.47±0.43 and 15.69±0.25-23.88±0.07 g/100g, respectively. As a result of analysis of fatty acids, docosahexaenoic acid (DHA), oleic acid and linoleic acid values were higher than other fatty acids. In addition, polyunsaturated (PUFA) values were higher than saturated (SFA) and monounsaturated (MUFA) fatty acid values in the eggs obtained from all stations. Consequently, the amino and fatty acid values of rainbow trout eggs were determined to be sufficient for embryonic development of fish and this values showed rainbow trout eggs as potential source of food for human consumption.

    In this study, nutritional value, fatty acids, vitamin and amino acid contents of cultured and wild gilthead seabream (Sparus aurata L. 1758) were comperatively investigated. Fat and moisture contents of the wild type and cultured fish were 69.810±0.040-68.38±0.020 and 8.7±0.030-l 0.10±0.050%, respectively and the difference was statistically significant (p<0.05). However, difference in protein content of both wild and cultured fish (18.880±0.080 and 19.0±0.050%, respectively) was insignificant (p>0.05). Aspartic asit, threonin, serine, glutamic asit, valine, methionine, isoleucine, leucine, tyrosine, histidine and arginine content were significantly higher (p<0.05) in wild fish, wheras proline, glycine, alanine, phenylalanine and lysine were significantly higher (p<0.05) in cultured fish. Vitamin A content was significantly higher in cultured fish (p>0.05), however, vitamins E and B2 were abundant in wild fish as compare to the cultured fish (p>0.05). Of monounsaturated fatty acids, oleic and palmiteloic acid contents of both cultured and wild gilthead seabreams were insignificant (p>0.05), whereas linoleic acid content was higher in cultured fish (p<0.05). As for the polyunsaturated fatty acids, α-linoleic acid and eicosanoic acid contents were insignificant in both cultured and wild fish.     Comparative Diplectanum aequans (Monogenea) infestations in cultured European seabass (Dicentrarchus labrax) in the Black Sea and the Aegean Sea

    In the present study, monogenean infestations were investigated on the gills of the European seabass Dicentrarchus labrax grown in culture cages located at Yakakent coast of the Black Sea and Milas coast of the Aegean Sea. Parasitological investigations were conducted simultaneously at both localities during September 2014, February and April 2015. While a total of 100 fish specimens were examined from Yakakent samples whose average length was 19.37 cm, a total of 88 fish specimens were examined from Milas samples whose length was 22.67 cm in average. Only one monogenean species Diplectanum aequans was recovered from investigated fish specimens at both sampling localities. Infestation prevalence (%) and mean intensity values of D. aequans were 89.0% and 9.6 +/- 0.8 in Yakakent samples while those infestation indices were 90.9% and 13.3 +/- 1.2 in Milas samples, respectively. The difference between the infestation prevalence (%) values of D. aequans at both sampling localities was not statistically significant, on the other hand, the difference was statistically significant in the mean intensity values at both locations. Diplectanum aequans showed a homogeneous distribution in all gill arches of fish without any statistically significant difference.This is the first comparative study on the infestation of D. aequans on the gills of European sea bass D. labrax cultured in the Black Sea and the Aegean Sea.

    Comparative Fatty Acid Compositions of Tissues of Rainbow Trout (Oncorhynchus mykiss) with Different Ploidy and Sex

    The purpose of this study was to evaluate the fatty acid contents in various tissues (fillet, liver, gonad) of different ploidy (triploid and diploid) and sex (female and male) rainbow trout (Oncorhynchus mykiss) in the breeding season. In the study, diploid and triploid rainbow trouts belonging to the same age group (3+) were used. Fish were fed with commercial feed containing 45% crude protein and 20% crude fat until satiation. At the end of the 75-day study, biometric measurements of the fish were made and the tissues were stored in a deep freezer until biochemical and fatty acid analysis. The first finding of this study identified that ploidy (triploid and diploid) affects the biochemical and fatty acid composition of rainbow trout. The second major finding was that the polyunsaturated fatty acid values were higher and the saturated fatty acid values were lower in all tissues (especially female gonads) than other fatty acids. The results also indicate that the comparative among the biochemical and fatty acid composition of the fillet, liver, and gonad of rainbow trout is further illuminated by these data.

    Comparison of Food, Amino Acid and Fatty Acid Compositions of Wild and Cultivated Sea Bass (Dicentrarchus labrax L., 1758)

    Bu çalışmada doğal ve kültür levrek balıklarının (Dicentrarchus labrax) besin, aminoasit ve yağ asitleri kompozisyonları karşılaştırılmıştır. Doğal ve kültür levrek balıklarında sırasıyla ham protein (HP) değerleri %19.13 ve 18.0; ham yağ (HY) değerleri %8,90 ve 10,3; nem oranları %68,37 ve 68,83 olarak bulunmuştur. Esansiyel amino asit (EAA) değerleri doğal ve kültür levrek balıklarında sırasıyla 692111 mg/100g, 7360,5266,5 mg/100 g tespit edilmiş ve fark önemsiz bulunmuştur (P0,05). Doymuş yağ asit (?SFA) değerleri doğal ve kültür levrek balıklarında sırasıyla %26,4980.059, %25,1020,012 olarak tespit edilmiş ve fark önemli bulunmuştur (P0,05). Doğal ve kültür levrek balıklarında sırasıyla tekli doymamış yağ asit (?MUFA) değerleri %27,5530,22, %30,1360,019; çoklu doymamış yağ asit (?PUFA) değerleri %35,0630.023, %33,8200,12 olarak tespit edilmiş, farkın önemsiz olduğu belirlenmiştir (P0,05). Doğal ve kültür levrek balıklarında n3/n6 oranları 2,0210,005 ve 1,0240,059 olarak bulunmuştur (P0,05).     Current Situation and Position of Fisheries Production of Sinop Province in Turkey’s Fisheries Production#

    In the present study, the production amount in the last five years (2015-2019) of Sinop province,\rwhich is located in the Black Sea Region and a significant part of fisheries production is carried out,\rwas evaluated. For this purpose; Sinop Provincial Directorate of Agriculture and Forestry and TUIK\r(Turkish Statistical Institute) data were used. There are 2.326 commercial fishermen and 444 fishing\rboats in Sinop province. In the sea area of Sinop, 5 enterprises still produce culture fish in cages. The\r2 potential marine culture areas identified in Sinop have an annual production capacity of 32.430 tons\r(31 enterprises). In addition, 5 bivalves (4.940 tons/year) and 1.000.000 number/year capacity\rjuvenile fish production facilities are at the project stage. The total fisheries production of Sinop\rProvince in 2019 was 34.620,9 tons, and 1.505 tons were obtained from aquaculture. In addition to\rthese, 3.924 tons of fish processing facilities per year, and 35 tons of fish meal and oil processing\rfacilities per year are operated. 66% of sea fish caught in Sinop are anchovy (Engraulis encrasicolus\rponticus), 16% sprat (Sprattus sprattus phalericus), 13% horse mackerel (Trachurus trachurus), 3%\rbluefish (Pomatomus saltatrix) and 2% consists of other species. The most preferred marine fish by\rthe consumers are anchovy (Engraulis encrasicolus ponticus), horse mackerel (Trachurus trachurus),\rwhiting (Merlangus merlangus), red mullet (Mullus barbatus), bluefish (Pomatomus saltatrix), turbot\r(Psetta maxima) and bonito (Sarda sarda) and sea bream (Sparus aurata), sea bass (Dicentrarchus\rlabrax) and rainbow trout (Oncorhyncus mykiss) are the culture fish species offered for sale\rthroughout the year.

    Deniz Salyangozlarının ( Rapana venosa Valenciennes, 1846 ) Biyometrik Özelliklerine İlişkin Bir Araştırma

    Sinop iç ve dış limanlarında 3 dönem (haziran, ağustos, ekim) olarak yürütülen çalışmada, deniz salyangozlarının biyometrik özellikleri araştırılmıştır. Her dönemde ortamlardan rastgele alınan 100 örnek üzerinde çalışılmıştır. Çalışma süresince 600 birey kullanılmıştır. Dönemlere göre incelenen salyangozlarda total boy, sırasıyla, iç limanda; 7,9 ? 4,4 cm, 8 . 1 ? 0 . 9 cm, 8 . 2 ? 1 . 1 cm, dış limanda ise 7 . 8 ? 0 . 9 cm, 6 . 9 ? 0 . 6 cm, 9 . 9 ? 0 . 6 cm olarak hesaplanmıştır. Total ağırlık sırasıyla, iç limanda; 91 . 8 ? 22 . 9 g, 77 . 8 ? 29 . 2 g, 100 . 5 ? 52 . 2 g, dış limanda ise 82 . 5 ? 28 . 3 g, 54 . 5 ? 16 . 8 g, 53 . 9 ? 18 . 1 g olarak tespit edilmiştir. Yapılan istatistiki analizlere göre; total canlı ağırlık bakımından farklılığın önemli olduğu (p<0 . 05), total boy, genişlik ve ağız genişliği bakımın dan farklılığın önemsiz olduğu (p ? 0 . 05) tespit edilmiştir

    Determination of Essential Amino Acid Changes Related to the Growth of Sea Bass (Dicentrarchus labrax)

    The aim of this study was to determine the changes in essential amino acids related to the growth of sea bass (Dicentrarchus labrax) from the first stocking in cages to the harvesting in production areas at the Aegean and the Black Seas. The highest levels of essential amino acids at the beginning of the trial were in lysine, leucine and threonine, while the highest levels of essential amino acids at the end of the trial at both production area were in lysine, leucine, threonine and isoleucine. The total essential amino acid value of 9.47 +/- 0.02 at the beginning of the study exhibited irregular fluctuations between the periods and was 10.45 +/- 0.01 and 9.70 +/- 0.01 at the Aegean and the Black Seas, respectively at the end of the study. In the study, it was determined that there was a reverse relation between the water temperature and the total essential amino acid values in both production areas, and the observed differences in some amino acids were related to the water parameters and the changes in amino acid metabolism due to the growth of the fish.

    Determination of fatty acid composition in relation to the growth of meagre (Argyrosomus regius) cultured in net cages

    The aim of this study was to determine the composition of fatty acids of meagre (Argyrosomus regius) produced in net cages at a private company in the Aegean Sea. Regular samples were taken over the study period by random sampling for the estimation of fatty acid contents. At the end of the study, the highest mean (+/- SD) fatty acids in fish flesh were recorded as oleic acid (26.46 +/- 0.01%), linoleic acid (20.91 +/- 0.01%) and palmitic acid (15.99 +/- 0.01%). Mean (+/- SD) total saturated (SFA), monounsaturated (MUFA) and polyunsaturated (PUFA) fatty acid values were determined as 26.17 +/- 0.03%, 32.62 +/- 0.03% and 31.24 +/- 0.01% respectively. The total values of omega-3, omega-6, omega-9, eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) were 8.73 +/- 0.01 - 14.51 +/- 0.04%, 18.78 +/- 0.03 - 25.26 +/- 0.01%, 27.12 +/- 0.01 30.5 +/- 0.01%, 1.39 +/- 0.01 - 3.52 +/- 0.01% and 4.24 +/- 0.01 - 7.64 +/- 0.01% respectively and all these values varied significantly over time (P < 0.05). Despite having a low crude fat content, the meagre could be a good source of PUFA, in terms of fatty acids.

    DETERMINATION OF GROWTH AND NUTRIENT COMPOSITION VALUES IN MEAGRE (ARGYROSOMUS REGIUS) AQUACULTURE

    The aim of this study was to determine the growth and nutrient composition values of the meagre (Argyrosomus regius) from the cage stocking until the harvest weight. The study was conducted in a private farm operating in the Aegean Sea between 26 September 2015 and 30 November 2016. Fish were taken from the cages according to the random sampling method at specific periods and their growth values were calculated and biochemical analyses were carried out. The initial fish weight 8.22 +/- 0.13 g reached 373.96 +/- 15.65 g at the end of the study. During the study, feed conversion rate was found to be 1.92 +/- 0.19. At the end of the study, carcass yield value was 31.63 +/- 0.82%, crude protein value was 20.10 +/- 0.04% and crude fat value was 3.19 +/- 0.13%. Weight gain, specific growth rate and thermal growth values were found to be higher in the fingerling period of the fish compared to those obtained in the other periods. Also, changes in the seawater temperature had a significant effect on feed consumption and net feed conversion rate. While rapid weight gain is an advantage in meagre fish aquaculture, low carcass yield, low fat ratio, cost of feed, market status and consumer preferences have a negative effect on widespread meagre aquaculture. Increasing the fat content of the meagre and adopting different marketing techniques for meagre fish that will be fed with economical feed suitable to the species requirements will help meagre to find a place in cultured fish market.
