It was intended to reveal the use of Tokat Bez Sucuk in the local cuisine culture in the framework of sustainable gastronomy, its production stages, and its differences from other types of sausage. In this context, interviews were conducted with nine participants who produced Tokat Bez Sucuk using the semi-structured interview technique. In the interview, which included various questions ranging from the stages of production to the consumption habits of Tokat Bez Sucuk, important information that would contribute to the field was obtained from the producers. In addition, the transfer of Tokat Bez Sucuk, which is a cultural gastronomic value, to future generations and its importance in terms of sustainable gastronomy were emphasized. In line with the information obtained, various suggestions were made for the standardization, promotion, preservation, and sustainability of Tokat Bez Sucuk, which is an important component of gastronomic tourism.Öğe Psychological capital as a moderator in the relationship between job insecurity, job stress, and hotel employees? turnover intention during the Russia-Ukraine war(Elsevier Sci Ltd, 2023) Ergun, Gozde Seval; Bozkurt, Handan Ozcelik; Arslan, Emin; Kendir, Hakan; Yayla, OzgurIt is crucial to examine the impact of professional uncertainty on tourism staff following the commencement of the Russia-Ukraine crisis in 2022. The major goal of this study is to see how job insecurity perception, job stress, and turnover intention interact, as well as the moderating role of PsyCap in these interactions. The study was conducted in Antalya, a popular vacation destination for Russian and Ukrainian visitors. The results of the research show that the perception of job insecurity positively affects both job stress and turnover intention. Furthermore, job stress has been shown to have a positive effect on turnover intention. Additionally, PsyCap's moderator effect was confirmed for both the association between job insecurity and job stress, and the rela-tionship between job insecurity and turnover intention. It is thought that the study will contribute to the liter-ature in terms of measuring employee perception while the 2022 Russia-Ukraine crisis continues.Öğe The Moderator Role of Environmental Interpretations in the Relationship between Planned Behavior Level and Environmental Awareness Perception of Hotel Employees(Vysoka Skola Obchodni & Praze, 2021) Yayla, Ozgur; Bozkurt, Handan Ozcelik; Arslan, Emin; Kendir, HakanEnvironmental problems, environmental awareness, and efforts to protect the environment are among the issues that concern the whole world and that need to be acted upon. Environmental concerns, which have come to the fore, especially in recent years, are closely related to the tourism sector. The main purpose of this research is to determine the moderator role of environmental interpretations in the relationship between planned behavior levels and environmental awareness perceptions of hotel employees. The sample of the research consists of 697 employees, who worked in five-star hotels in the Alanya region between the months of August and September 2020. As the data collection method in the research, the questionnaire technique has been preferred. As a result of the data obtained from the research, the Amos program was used to test the structural model. Respectively, these analyzes are reliability analysis, confirmatory factor analysis, discriminant analysis, and regression analysis. As a consequence of the regression analysis conducted within the context of the study, it has been determined that the level of attitude, which is considered to be one of the planned behavior factors of the employees in the hotel enterprises, has a positive and significant effect on their environmental awareness. In addition, it has been determined that environmental interpretations have a moderating role in the relationship between the attitude levels and environmental awareness of the employees, participated in the research.
